four o’clock on. I should have been here for her.”
“Gwen, you were here for her.” Peter’s voice was
gentle. “Your timing was just off a little. And maybe it’s not a bad thing that
the police confronted her for breaking in last night. It’s a wake-up call that
she’s making some desperate decisions. Bad ones.”
“You’re a wise man, Officer Shaughnessy.” Gwen
dabbed at her eyes with her napkin and gave him a grateful smile.
“I have a sister. She made some bad choices at that
age, too.”
He drank down
his juice and slid off the stool with a fluid motion that rippled the muscles
of his torso, under his tight, white T-shirt. A thrill shot through Gwen.

Gwen is
a psychotherapist, but she doesn’t need a Ph.D. to know food is the way to a
man’s heart and cookies save the day when the going gets tough! Occasionally,
she chooses a recipe that had healthy ingredients. The better to rationalize
seconds...
Here’s
Gwen’s recipe for Almond-Butter Quinoa Bars. I’ve modified it to use a
non-sodium baking powder and no salt, but you may want to use a teaspoon of
baking powder and ¼ tsp. salt.
Almond-Butter Quinoa Bars
¼ cup
unsalted butter, softened
¾ cup
crunchy almond butter
2 large
eggs at room temperature
¾ cup
packed light brown sugar
1 tsp.
vanilla
¾ cup
quinoa flour
1 tsp.
Featherweight baking powder substitute
1 cup
bittersweet chocolate chips
Use a
pre-heated 350-degree oven and an 8-inch foil-lined baking pan.
Beat
butter and almond butter until creamy. Beat in eggs, brown sugar, and vanilla.
Whisk
together flour and baking powder. Add the flour mixture to the wet ingredients
and mix until combined. Stir in chips.
Bake
25-35 minutes until toothpick in center comes out clean. Let cool for 45
minutes. Lift from pan to cutting surface and cut into 24 squares.
Cool
completely. May be stored up to 5 days in the refrigerator (if they last that
long!)
Each bar
has 247 calories and 3 grams of protein.
